Pudina Chicken


My daughter is coming home today n she loves this dish. 
So i'm cookin it for her. Can't wait to see her. Its been 2 weeks.

Ingredients

1 kg Chicken chopped n cleaned
*2 cups pudina leaves
*1 cup coriander leaves
*2 tbsp ginger garlic paste
*1 big onion chopped
*5 green chilies 
*1 tsp cumin powder
*1 tsp coriander powder
*1 tsp turmeric powder 
*1 tbsp plain chili powder
2 tbsp of curd or a squeeze of lemon or lime ( I did not have both so I used 2 chopped  tomatoes)
salt to taste
2 @ cinnamon stick, clove n cardamom 
4 to 5 tbsp oil
curry leaves n coriander leaves to garnish 

=> Grind all d ingredients with d * sign.
=> Heat oil in a wok n add in d cinnamon stick, clove n cardamom.
=> Then put in d chicken n tomatoes, stir and add salt.
=> Pour in d pudina mixture, stir n let it cook for about 20 to 25 min. 
=> Lastly garnish n serve.

If ur using curd, add it just before turning off the stove.

Stingray fish curry



It was rainning when I woke up. Sharee had no college, but she had tuition with Shameera at 9am. Nana had to go to sch at 12.30 n he wanted atcha to send him. I needed atcha to take me to d market cos there was nothing in d fridge to cook! So I woke all of them up. I went for breakfast with Nana n atcha to 'Day to Day'. Then we went to the shop n managed to get fresh ikan pari. Hubby said make meen kholumbu (fish curry). So I bought brinjal, tomatoes, green chilies n etc....etc.....



I had to cook n feed Nana before he goes to school. So rush to d kitchen................

Ingredients

650g stingray (pari)
3 large  tomatoes cut @ into 4
1 large brinjal cut into 8
5 ladies finger cut @ into 2
3 green chilies cut @ into 4
curry leaves
*5 tbs fish curry powder 
*3 tbs plain chili powder
*1 tsp cumin powder
*1 tsp fennel powder
1 tsp fenugreek
1 onion chopped
1 tbsp ginger n garlic paste
1 tbsp tamarind  pulp
1 litter water
salt

=> Wash d fish ( I had it cleaned n chopped by the shopkeeper)
=> Make a paste by adding a little water to ingredients *
=> Mix tamarind to d 1 litter of water.
=> Heat d oil in the pot or wok ( I have a manchatti = claypot)
=> Add the fenugreek, chopped onions, ginger garlic paste n curry leaves.
=> When d aroma starts to rise add in the * paste.
=> Stir till the oil rises.
=> Add in brinjals n green chili, then stir.
=> Add in the tamarind water, salt n let it simmer for awhile or until brinjals are 3/4 cooked.
=> By this time the gravy would have thickened a bit, add d fish n let it cook.
=> Lastly put in d tomatoes n ladies finger. Turn off d stove n its done.

If u want u can pour in a little thick coconut milk before u turn off d stove.

Thick fish curry with rice...... yummy.............
Leftover fish curry is awesome d next day, be it with tosai or bread............

American Chocolate Cake









Ingredients


250g cake flour
50g cocoa powder
20g chocolate emulco
250g butter
300g caster sugar
240g egg (without shell)
1tsp vanilla essence
1/2 tsp salt
1/2 tsp soda bicarbonate
200ml  warm water


=> mix d emulco, cocoa powder n warm water. Put aside.
=> Beat butter, sugar n salt till fluffy.
=> Add in flour n soda bicarbonate n beat.
=> Add in d emulco mixture.
=> Pour into a 9" pan which has been greased.
=> Bake at 180C for about 50 to 60 min.


* If u don't have emulco, just increase d cocoa powder to 65g.
* U can also divide  d batter into 2,  9" pan n bake for 35min. 

Chocolate Ganache


500g cooking chocolate.
200g double cream

=> Heat double cream until it comes to just under the boil , turn off the fire n add in d cooking chocolate.

NANA'S BIRTHDAY CAKE

Its a special cake. I made 4 different flovoured cake. Sharvani 
cut them n decorated each pc n came up with this design.




Cakes: Red Velvet, Vanilla Butter Cake, American Chocolate Cake n Blueberry Butter Cake.






JELLY CAKE (ROSE & COCONUT MILK FLAVOUR)

Made this for my precious son's birthday. Love u baby.

                                         

                                                        

Ingredients

clear layer (A)

25g agar agar powder (3tbsp)
1500ml water
250g sugar
daun pandan

coconut milk later (B)

25g agar agar powder
1500ml water
100g coconut powder
250g sugar
pinch of salt
 pandan leaves


=> Boil all d ingredients in A and let to cool slightly.
=> Boil all ingredients in B and let to cool slightly
=> Prepare a medium heart shaped cake pan. (wet the pan before using)
=> You can divide d portions according to the no of layers you want.
=> Colour them as u desire.
=>Pour the first layer into wet pan n let it set.
=> Before pouring the second layer, scratch d top of the first with a toothpick.
=> Continue until all d layers r done.

Orange butter cupcakes




ORANGE BUTTER CUPCAKE

Ingredients

90g butter, softened
90g cream cheese, softened
2 tsp finely grated orange rind
150g caster sugar (I used only 120g)
2 eggs
50g self-raising flour 
75g plain flour

=> Preheat oven to 180 C, Line 12 hole standard muffin tray with paper cases 
or use any fancy cases
=> Beat butter, cheese, rind, sugar and eggs until fluffy.
=> Beat in flours on low speed until just combined.
=> Divide mixture among cases
=> Bake standard sized cupcakes for 20 min n bigger cupcakes for 30 min.
=> Turn cakes onto wire rack to cool

BUTTER CREAM

90g butter
1/4 tsp orange essence
160g icing sugar
1 tbsp milk

=>Beat butter n essensce till fluffy
=> Add sugar n milk n beat.
=> Add in desired colour.
=> Spread cakes with butter cream n decorate.

Mini Cheese Tarts


                   
               













These luxurious little tarts are an indulgent treat. The silky texture of the cream cheese combined with the vanilla-flavoured pastry is truly unsurpassable. These blueberry jam topping delights are perfect served warm or cold with a cup of tea. Mmmmmmmmm............  sinful but can have it on cheating days. ;)

CHEESE TART

Recipe for d Sweet Shortcrust Pastry
(This pastry can be used for cheese tarts, egg tarts, blueberry almond tarts, hazelnut tarts, fruit tarts n etc.)

Ingredients
125g butter
65g icing sugar
250g plain flour
1 egg yolk
1/2 tsp vanilla essence
1 tbsp water

=> Sift flour n sugar into mixing bowl.
=> Rub butter into flour mixture until resembles coarse crumbs.
=> Add in egg yolk, vanilla essence n water.
=> Shape dough into ball n refrigerate before using

Cheese Filling

Ingredients
250g cream cheese
20g butter
60g fine granulated sugar
1 egg  *(optional if u r not using d egg, add in extra 10g butter)

=> Beat cream cheese, butter n sugar until fluffy.
=> * add in egg n beat until well mixed.
=> Pour mixture into baked tart shells. (filling is enough for about 12 shells)
=> Bake at 180 C for 10 min.

Hey, u know what, u can buy ready made shells.


White Chocolate Roses

Well I just wanted to take some extra goodies for d kids so i opened the fridge and saw about 200g of white eating chocolate. I melted it in a double boiler and poured into the rose chocolate mold and wallah!

Jelly Cake


Daarshawnee's 21st birthday




These cakes were baked by me n decorated by Sharvani for Daarshawnee's 21st birthday. The bottom layer is a vanilla butter cake, the third chocolate, 2nd butter and the top layer is red velvet. They r both my daughters. Daarshawnee my 1st born n Sharvani my 2nd. (My wonderful girls) muuaah......


 Red Velvet Cake


Ingredients

125g butter
280g caster sugar
2 eggs
300g flour
2tbsp cocoa powder
1tsp baking soda
1tsp salt
1tsp vanilla essence
1tsp white vinegar
2tsp bright red colour (powder)
240ml buttermilk
 8" cake pan (2)


=> Heat oven to 175C.
=> Sift flour + cocoa powder + b.soda + salt.
=> Beat Butter n sugar till fluffy.
=> Add in eggs 1 at a time + vanilla essence.
=> Add in the flour n butter alternately.
=> Beat at low speed till well blended.
=> Pour into pans and bake for about 25 min.
=> After baking the cakes let them cool n put them into d fridge for 1hr.
(It'll be easier to spread the cream)


Cream Cheese frosting


360g cream cheese
70g butter
200g icing sugar
1tsp vanilla essence


=> Beat cream cheese n butter.
=> Add in icing sugar.
=> beat till smooth 

                                                                   Happy Decorating.........

* You can replace buttermilk with 
(240ml UHT whipped cream or Milk + 1tsp vinegar, let to rest for 5 min till thick)
